ORIM Weekly W18 2025
ORIM WEEKLY The weekly letter on preventive immunonutrition | WEEK 18 May 5-11, 2025 |
EDITORIAL
Early May and the first warm days have arrived. We explore the rise of regenerative ocean farming and dive into the emerging science of how sunlight exposure, beyond vitamin D, activates nitric oxide pathways in the skin that lower blood pressure and improve cardiovascular health.
01 | SMARTFARMING & AGRITECH |
Regenerative Ocean Farming Gains Momentum
GreenWave launched 100 new regenerative ocean farms along the US Atlantic coast. Each farm grows kelp, mussels, and oysters in a 3D underwater structure that requires zero inputs (no feed, water, fertilizer) while sequestering carbon and providing nutrient-dense superfoods rich in iodine, zinc, and omega-3.
Satellite Crop Insurance Protects Small Farmers
WorldCover (Ghana) insured 500,000 smallholder farmers using satellite-verified crop monitoring. When satellite data detects drought or flood damage, payouts are automatic within 48 hours, no paperwork required. Food security and farmer resilience improve simultaneously.
AI Breeding Accelerates Nutrient-Dense Varieties
CGIAR's AI breeding platform reduced the time to develop new biofortified crop varieties from 12 years to 4. The latest release: a zinc-enriched rice variety yielding 50% more zinc per serving, targeting the 2 billion people globally with zinc deficiency.

Sunlight Beyond Vitamin D: The Nitric Oxide Effect
Researchers at the University of Edinburgh (Journal of Investigative Dermatology, May 2025) showed that UV-A radiation releases nitric oxide from skin stores, lowering blood pressure by 4 mmHg for up to 6 hours. This mechanism is independent of vitamin D and may explain why cardiovascular mortality is lower in sunnier regions.
Moderate sun exposure protects the heart through nitric oxide release, independent of vitamin D. The key is consistency: 15-20 minutes daily, avoiding sunburn.
THIS WEEK IN BRIEF
► Nitric Oxide: Dietary nitrate (from beets, arugula) works synergistically with sun-derived nitric oxide, reducing blood pressure by up to 8 mmHg combined (Hypertension, 2025).
► Skin Health: Astaxanthin supplementation (4mg/day) reduces UV-induced skin damage by 40% and improves skin elasticity by 15% (Nutrients, May 2025).
► Blue Light: Evening blue light exposure from screens suppresses melatonin by 50% and delays sleep onset by 30 minutes (PNAS, 2025).
03 | ORIM OF THE WEEK: CHRONOBIOLOGICAL RECIPES |
DAY | MAIN MEAL | CHRONO PRINCIPLE |
MONDAY | Seaweed and cucumber salad with sesame and rice vinegar | Iodine + fucoidans + silica (cucumber). Ocean-derived mineral boost. |
TUESDAY | Grilled chicken with arugula, sun-dried tomatoes, and pine nuts | Protein + nitrates (arugula) + lycopene. Cardiovascular protection al fresco. |
WEDNESDAY | Mussel and fennel linguine with white wine and parsley | Zinc + B12 + anethole + vitamin K. Mediterranean coastal dining. |
THURSDAY | Beetroot falafel in pita with tahini and pickled onion | Nitrates + plant protein + quercetin (onion). Nitric oxide maximization. |
FRIDAY | Grilled whole sea bream with lemon, herbs, and new potatoes | Lean protein + limonene + resistant starch. Simple spring elegance. |
SATURDAY | Acai bowl with granola, coconut, and fresh berries | Anthocyanins + MCTs (coconut) + fiber. Weekend antioxidant breakfast. |
SUNDAY | Spring lamb chops with mint pesto, peas, and broad beans | Iron + chlorophyll + folate. Celebrating peak spring produce outdoors. |
ORIM Tip: Arugula is the vegetable with the highest nitrate content per gram. Just 100g provides enough nitrate to measurably lower blood pressure for 4-6 hours via the nitrate-nitric oxide pathway.
