As February draws to a close, we prepare for the immunological transition into spring. This week investigates glutathione, the master antioxidant, and its depletion during prolonged winter stress. Building glutathione reserves now ensures optimal detoxification as seasonal allergens emerge.

Cooking: Light steaming for 3 minutes preserves 90% of glutathione. Boiling destroys most of this water-soluble tripeptide.
