The transition from January to February brings continued cold stress alongside increasing photoperiod. This week we examine how selenium protects thyroid function during winter metabolic demands. Our AgriTech segment explores selenium biofortification strategies that could transform crop nutritional profiles.

Selenium and Thyroid Hormone Metabolism
The thyroid gland contains the highest selenium concentration per gram of any organ. Selenoprotein deiodinases convert T4 to active T3, a process impaired when selenium intake falls below 55 mcg daily. A 2023 meta-analysis in Thyroid showed that selenium supplementation reduced thyroid antibody levels by 40% in autoimmune thyroiditis patients.
Light Therapy and Morning Cortisol Synchronisation
Exposure to 10,000 lux bright light within 30 minutes of waking advances the circadian clock by 1-2 hours and normalises cortisol pulsatility. A 2024 study in the Journal of Biological Rhythms found that winter light therapy restored NK cell cytotoxicity to summer levels within 14 days. This is a zero-cost immunonutrition intervention.
Selenium Biofortification via Foliar Spray
Foliar application of sodium selenate at 10 g/ha increases wheat grain selenium by 10-fold without phytotoxicity. A 2023 field trial published in the Journal of Cereal Science demonstrated consistent biofortification across three European soil types. This AgriTech solution addresses the widespread selenium deficiency in European populations cost-effectively.

Brazil Nuts: Nature's Selenium Capsule
A single Brazil nut delivers 70-90 mcg of selenium, exceeding the daily requirement. Selenomethionine from Brazil nuts has 90% bioavailability, superior to selenite supplements. However, intake should not exceed 3-4 nuts daily to avoid selenosis. Their high unsaturated fat content also provides a matrix for fat-soluble vitamin absorption.
Warning: Never exceed 4 Brazil nuts daily. Chronic selenium toxicity causes hair loss, nail brittleness, and neurological symptoms.

ORIM Tip: Store Brazil nuts in the freezer to prevent rancidity. Their high polyunsaturated fat content makes them prone to oxidation at room temperature, which destroys both flavour and selenium bioavailability.
