ORIM Weekly W04 2022
ORIM WEEKLY The weekly letter on preventive immunonutrition | WEEK 04 January 24-30, 2022 |
EDITORIAL
January is peak cold and flu season. This week, we examine the evidence behind immune-boosting superfoods, separating genuine science from marketing hype. Your immune system is a complex orchestra, and each nutrient plays a specific instrument.

Zinc: The Immune System's Gatekeeper
A comprehensive review in Advances in Nutrition (2021) established that zinc deficiency affects roughly two billion people globally and impairs virtually every aspect of immune function. Zinc is essential for thymulin activity, natural killer cell cytotoxicity, and neutrophil chemotaxis. Supplementation with 15-30mg daily during the first 24 hours of cold symptoms reduced duration by an average of 33%.
Elderberry Extract: Evidence and Limitations
A 2021 systematic review in Complementary Therapies in Medicine analyzed five randomized controlled trials of elderberry (Sambucus nigra) supplementation. Results showed modest reduction in cold duration and severity, likely mediated by anthocyanin-driven cytokine modulation. However, researchers cautioned against use during active cytokine storm conditions, as elderberry may amplify inflammatory cascades.
Sleep Deprivation and Vaccine Efficacy
Striking data from the Annals of Internal Medicine (2021) demonstrated that individuals sleeping fewer than six hours per night produced 50% fewer antibodies after influenza vaccination compared to those sleeping seven or more hours. The study highlights sleep as a non-negotiable foundation for immune competence, particularly relevant during winter vaccination campaigns.
02 | BIOLOGICAL ADVANCES |
Garlic (Allium sativum)
Garlic has been humanity's most enduring antimicrobial food. Its active compound allicin, released when cloves are crushed, exhibits broad-spectrum antibacterial, antiviral, and antifungal activity. A 12-week British trial showed that daily garlic supplementation reduced cold incidence by 63%. Aged garlic extract additionally supports cardiovascular health through hydrogen sulfide-mediated vasodilation.
Crush garlic cloves and wait 10 minutes before cooking. This allows the enzyme alliinase to fully convert alliin into bioactive allicin before heat deactivates the enzyme.
THIS WEEK IN BRIEF
► STUDY: Harvard T.H. Chan School publishes largest-ever analysis linking ultra-processed food consumption to increased systemic inflammation and immune dysregulation.
► MARKET: Global functional food market reaches $280 billion, driven by post-pandemic consumer demand for immunity-supporting products and transparent ingredient sourcing.
► AGRITECH: Dutch company AppHarvest deploys AI-powered robots for indoor tomato harvesting, reducing labor costs while maintaining pesticide-free organic certification.
03 | ORIM OF THE WEEK: CHRONOBIOLOGICAL RECIPES |
DAY | MAIN MEAL | CHRONO PRINCIPLE |
MONDAY | Garlic and ginger chicken bone broth with turmeric and star anise | Dinner (19:00) - antimicrobial compounds peak during evening immune patrol |
TUESDAY | Warm lentil salad with roasted garlic, sun-dried tomatoes, and basil | Lunch (12:00) - zinc and iron from lentils for midday immune support |
WEDNESDAY | Thai coconut shrimp soup (tom kha goong) with lemongrass and galangal | Lunch (12:30) - selenium from shrimp activates glutathione peroxidase |
THURSDAY | Roasted cauliflower steaks with romesco sauce and toasted almonds | Dinner (18:30) - vitamin C from cauliflower supports neutrophil function |
FRIDAY | Pan-fried sea bass with celeriac puree and braised leeks | Dinner (19:00) - prebiotic inulin from celeriac feeds beneficial bacteria |
SATURDAY | Moroccan vegetable couscous with chickpeas, raisins, and harissa | Lunch (13:00) - diverse phytonutrients from multi-vegetable preparations |
SUNDAY | Beef bourguignon with pearl onions, mushrooms, and mashed potatoes | Lunch (12:30) - iron and B12 from beef for hematopoietic support |
ORIM Tip: Add two crushed garlic cloves to your evening soup during cold season. Raw garlic retains maximum allicin potency, so stir it in just before serving rather than cooking it with the base.
